Preheat your oven to 375°F. If using an air fryer, preheat it to 350°F.

In a medium bowl, combine the well-drained full-fat cottage cheese, shredded mozzarella, large egg, garlic powder, onion powder, paprika (if using), salt, and pepper. If desired, add the almond flour and olive oil (or melted butter) for extra firmness and crispness.

Mix all ingredients thoroughly until well combined. For an optional 'cheese pull' effect, you can hide a tiny cube of mozzarella inside each ball before rolling.

Scoop tablespoon-sized portions of the mixture and gently roll them into balls.

Place the cheese balls on a baking sheet lined with parchment paper for oven baking, or directly into the air-fryer basket.

If baking in the oven, bake for 12 to 15 minutes, flipping the cheese bites once halfway through the baking process to ensure even crisping.

If air frying, air fry for 8 to 10 minutes, shaking the basket halfway through the cooking time.

Once cooked, carefully remove the crispy cheese bites and let them cool for 2 minutes before serving.
