Prepare the chuck roast by cubing it into 1 1/2 to 2-inch pieces. In a large bowl, toss the cubed chuck roast with 1/4 cup of Bachan's Japanese Barbecue Sauce to use as a binder. Season generously on all sides with your favorite bbq rub.

Preheat your smoker to 250°F. Place the seasoned chuck roast directly on the smoker grates and smoke for 3 hours.

After 3 hours, carefully remove the chuck roast from the smoker. Transfer the meat to a large piece of heavy-duty aluminum foil. Add 3 tablespoons of unsalted butter, 1/2 cup of beef broth, and 1 cup of Bachan's Japanese Barbecue Sauce to the foil with the meat. Wrap the foil tightly to create a sealed packet.

Return the foil-wrapped meat to the smoker and continue to smoke at 250°F for an additional 2 hours, or until the beef is fall-apart tender.

While the beef finishes smoking, prepare the caramelized onions. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the thinly sliced yellow onion and cook, stirring occasionally, until softened and caramelized, about 15-20 minutes.

During the last 2-3 minutes of cooking the yellow onion, add the thinly sliced green onions to the skillet and cook until slightly wilted.

Once the beef is tender, remove it from the smoker. Carefully unwrap the foil and transfer the beef to a large bowl. Shred the beef using two forks, incorporating the delicious juices from the foil packet.

Preheat your oven to 350°F. Slice the slider buns in half horizontally. Spread Sriracha mayo on the inside of the bottom buns. Arrange 6 slices of cheddar cheese over the mayo.

Layer the shredded BBQ beef over the cheddar cheese. Top with the caramelized yellow and green onions. Drizzle a little extra Bachan's Japanese Barbecue Sauce over the onions, then place 6 slices of provolone cheese on top.

Place the top halves of the slider buns back on. Brush the tops of the buns with melted unsalted butter and sprinkle generously with everything bagel seasoning.

Bake the sliders in the preheated oven for 20 minutes, or until the cheese is melted and bubbly and the buns are lightly golden.

Remove from the oven, let cool for a few minutes, then serve and enjoy your delicious BBQ beef sliders!
