Place 1 kg of chicken wings into a large bowl. Add 1/4 cup dark soy sauce, 1/4 cup oyster sauce, 1 tablespoon onion powder, 1 tablespoon garlic powder, 1 teaspoon salt, 1 teaspoon black pepper, 1 tablespoon chilli powder, 1 egg, and 2 tablespoons vinegar to the bowl. Mix all the ingredients thoroughly until the chicken wings are well coated. Cover the bowl with plastic wrap and refrigerate for 2 hours to allow the flavors to meld.

In a separate small bowl, combine 1 tablespoon garlic powder, 1 tablespoon onion powder, 1 teaspoon salt, 1 tablespoon chilli powder, and 1 tablespoon sugar (optional). Mix these ingredients together until well combined.

In another bowl, add 1 1/2 cups plain flour, 1 teaspoon salt, and 2 tablespoons corn flour. Mix these dry ingredients thoroughly.

Take a marinated chicken wing and lightly coat it in the prepared spicy rub mix. Next, transfer the seasoned wing to the plain flour coating mix and coat it thoroughly, ensuring all sides are covered. Dip the flour-coated wing back into the marinade, then coat it once more in the plain flour coating mix to create a double coating. Repeat this process for all the remaining chicken wings.

Heat cooking oil in a large pot or deep fryer. To test if the oil is hot enough, insert a wooden chopstick; if bubbles form around it, the oil is ready. Carefully place the coated chicken wings into the hot oil. Fry the chicken wings until they turn golden brown and become crispy.

Remove the fried chicken wings from the oil and place them on a wire rack to drain any excess oil. Serve the Spicy Fried Wings, optionally garnished with fresh herbs and a lime wedge.
