Slice the pork belly into 1-inch thick strips.

In a bowl, combine the sugar, honey, light soy sauce, dark soy sauce, Shaoxing wine, Lee Kum Kee Premium Oyster Sauce, five-spice powder, white pepper, salt, minced garlic, grated ginger, mashed red fermented bean curd, and water. Mix all ingredients thoroughly until well combined.

Add the sliced pork belly strips to the prepared marinade. Ensure all surfaces of the pork are completely coated with the marinade. Cover the bowl and marinate the pork for a minimum of 4 hours, or ideally, overnight in the refrigerator, to allow the flavors to fully develop.

Preheat an air fryer to 180°C. Line the air fryer basket with baking paper to prevent sticking and for easier cleanup.

Place the marinated pork strips in the preheated air fryer basket, ensuring they are arranged in a single layer without overcrowding. Cook for 15 minutes at 180°C.

While the pork is cooking, prepare the glaze by mixing 1 tablespoon of honey with 1 tablespoon of water. After the initial 15 minutes of cooking, carefully open the air fryer. Flip the pork strips to cook evenly on both sides. Brush the top surface of the pork with some of the prepared honey glaze. Return to the air fryer and cook for an additional 5 minutes.

After 5 minutes, open the air fryer again. Flip the pork strips once more. Brush the new top surface with the remaining honey glaze, ensuring a good coating. Continue to cook for another 5 minutes.

Once cooked, carefully remove the char siu from the air fryer. Let the pork rest for 10 minutes before slicing. Slice the char siu into desired portions and serve.
