Dice the 250g chicken breast into bite-sized pieces.

Pour in 400ml coconut milk and 200ml chicken stock into the pan.

Add 3 tablespoons peanut butter, 1 tablespoon soy sauce, and 1 tablespoon honey to the mixture. Stir well until all ingredients are combined and the peanut butter has dissolved into the broth.

Bring the broth to a gentle simmer, then add 150g udon noodles. Cook the noodles in the simmering broth for 3-4 minutes, or until they are tender.

Serve the Peanut Butter Chicken Ramen immediately. Garnish each bowl with a squeeze of fresh lime juice, sliced fresh chilli, chopped coriander, and crushed peanuts for added flavor and texture.
