Add rice into the rice cooker pot.

Rinse the rice, then add water up to the '3 cups' marking inside the rice cooker pot.

Place the two Chinese sausages directly on top of the rice and water in the rice cooker pot.

Close the rice cooker and select the 'WHITE RICE' setting. Press the 'COOKING' button.

Once the rice cooker finishes cooking, open it. The sausages will be cooked and resting on the fluffy rice.

Using tongs, remove the cooked sausages from the rice cooker.

On a cutting board, slice the cooked sausages into thin, coin-shaped rounds.

Add the sliced sausages back into the rice cooker with the cooked rice.

Add chopped scallions to the rice and sausage mixture.

Drizzle soy sauce over the ingredients in the rice cooker.

Using a spoon, thoroughly mix all the ingredients (rice, sausage, scallions, soy sauce) together in the rice cooker pot.

In a separate pan, add a generous amount of chili crisp.

Crack two eggs directly into the pan on top of the chili crisp.

Fry the eggs until the whites are set and crispy, and the yolks are still runny (sunny side up).

Scoop a serving of the mixed rice and sausage into a bowl.

Take a sheet of seaweed and crumble it over the rice in the bowl.

Carefully place the two chili crisp fried eggs on top of the rice and seaweed.

Add an additional spoonful of chili crisp on top of the fried eggs.

Mix all the ingredients in the bowl together before enjoying.
