In a large bowl, combine 200 grams flour, 1 egg, 10 grams salt, and 50 ml water. Mix with chopsticks until a shaggy dough forms, then knead by hand until it forms a smooth ball. Cover the dough and let it rest for 30 minutes.

Dice the 3 cloves of garlic, 1 green onion, and 10 grams ginger. Set aside the 2 dried chilies and 10 grams Sichuan peppercorns.

Score the skins of the 2 tomatoes. Pour hot water over them and let them sit briefly to loosen the skins. Peel the skin off the tomatoes, then dice the peeled tomatoes.

Heat a pan over medium-high heat and add 15 grams cooking oil. Add 200 grams minced pork and stir-fry until it is cooked through and lightly browned. This should take about 5-7 minutes.

Add the diced garlic, sliced ginger, dried chilies, and Sichuan peppercorns to the pan with the pork, and stir-fry until fragrant, about 1-2 minutes.

Add the diced tomatoes to the pan and stir-fry for 2-3 minutes.

Season the mixture with 10 grams soy sauce, 10 grams oyster sauce, 5 grams sugar, 5 grams salt, 5 grams chicken bouillon, and 5 grams pepper. Stir-fry to combine all ingredients.

Add 1 cup of water to the pan. Cover the pan and let the sauce simmer for 10 minutes.

Lightly dust a clean work surface with flour. Take the rested dough and roll it out very thinly using a rolling pin. Once thin, fold the dough sheet several times. Using a knife, slice the folded dough into thin strips to create noodles. Gently unfold the cut noodles to separate them.

Bring a large pot of water to a rolling boil. Add the prepared noodles to the boiling water and cook until they are tender, typically 2-4 minutes depending on thickness.

Once cooked, drain the noodles well. Transfer the drained noodles into individual serving bowls.

Pour the hot tomato and meat sauce generously over the noodles. Garnish with the diced green onion. Mix everything together thoroughly before serving.
