In a medium bowl, combine the sliced beef sirloin with 2 tablespoons low-sodium soy sauce, 1 tablespoon cornstarch, 1 teaspoon sesame oil, 1 teaspoon grated ginger, and 1 teaspoon minced garlic. Toss to coat evenly. Marinate for at least 15 minutes at room temperature, or up to 30 minutes in the refrigerator.

While the beef marinates, prepare the stir-fry sauce. In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 1/4 cup beef broth, 2 tablespoons honey, 1 tablespoon rice vinegar, 1 tablespoon cornstarch, and 1/2 teaspoon red pepper flakes until smooth. Set aside.

Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 3-5 minutes, until tender-crisp. Remove the broccoli from the skillet and set aside.

Add the remaining 1 tablespoon of olive oil to the same skillet. Increase heat to high. Add the marinated beef in a single layer and cook for 2-3 minutes per side, until browned and cooked through. You may need to cook the beef in batches to avoid overcrowding the pan.

Return the cooked broccoli to the skillet with the beef. Give the prepared stir-fry sauce a quick whisk and pour it over the beef and broccoli. Cook, stirring constantly, for 1-2 minutes, until the sauce thickens and coats the ingredients.
