Preheat your oven to 350°F. Line a small rectangular baking dish (approximately 8x4 inches or similar) with parchment paper, leaving an overhang on the sides to easily lift the brownies out later.

Place the chopped red apples into a food processor. Process until the apples are finely minced and resemble a chunky applesauce. Scrape down the sides of the bowl as needed.

In a separate small bowl, crack the large eggs and add the vanilla extract. Whisk with a fork until well combined.

Pour the whisked egg and vanilla mixture into the food processor with the minced apples. Add the unsweetened cacao powder.

Process all ingredients together until a smooth, dark brown batter forms. Ensure there are no large chunks of apple remaining.

Pour the batter into the prepared baking dish. Use a spatula to spread it evenly across the bottom.

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean (a few moist crumbs are fine for brownies). The top should look set.
