Cover the pot and cook for 5-7 minutes, or until the noodles are tender, the dumplings are cooked through, and the bok choy is wilted. Check for doneness according to package instructions for noodles and dumplings.

Remove the lid and stir in the 1 tablespoon of fresh lime juice. Taste and adjust seasoning with more salt or lime juice if desired.

Ladle the hot soup into bowls. Garnish with thinly sliced red Thai chilies (if using) and chopped scallions before serving immediately.
