Begin by preparing the fresh herbs. Take 1 bunch of flat leaf parsley and finely chop it.

Next, take 1/4 bunch of fresh oregano and finely chop it.

Prepare the garlic by peeling 4 cloves. Then, smash them and chop them into a puree.

Place all the finely chopped parsley, chopped oregano, and garlic puree into a mixing bowl.

Add 100ml of red wine vinegar to the bowl.

Pour in 200ml of extra virgin olive oil.

Add 1/2 tablespoon of chili flakes.

Season with salt and pepper to taste.

Thoroughly mix all the ingredients in the bowl until well combined.

The chimichurri is now ready to enjoy. It makes a great marinade for any meat, as well as a condiment.
