In a medium-sized bowl, combine the light soy sauce, dark soy sauce, light brown sugar, and rice vinegar. Add a drizzle of sesame oil, if desired.

Add the 350 grams of cubed protein (e.g., chicken) to the sauce mixture. Add approximately 1 to 2 teaspoons of cornstarch to the bowl. Mix thoroughly until the protein is well coated with the sauce and cornstarch.

Heat a wok or large pan over medium-high heat and add 1 to 2 tablespoons of cooking oil. Once the oil is hot, add the marinated protein to the pan. Stir-fry until the protein is fully cooked and lightly browned.

Once cooked, remove the protein from the pan and set it aside.

Add a little more cooking oil to the same pan, if needed. Add the chopped garlic, chopped ginger, and chopped onion. Stir-fry for a minute or two until fragrant.

Add the sliced carrots, broccoli florets, sliced bell pepper, and sliced mushrooms to the pan. Continue to stir-fry the vegetables until they are tender-crisp, retaining some crunch.

Return the cooked protein to the pan with the sautéed vegetables.

Add the pre-cooked noodles to the pan. Pour any remaining sauce from the protein marinade bowl over the noodles and vegetables.

Stir-fry all the ingredients together vigorously for a few minutes, ensuring everything is evenly coated with sauce and thoroughly heated through.

Transfer the finished stir-fry to serving plates or bowls. Garnish with chopped green onions/scallions and a sprinkle of sesame seeds before serving.
