Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the cubed tofu and stir-fry until golden brown and slightly crispy on all sides, about 5-7 minutes. Remove the tofu from the pan and set aside.

Add the remaining 2 tablespoons of vegetable oil to the same pan. Add the chopped onions and sauté for 3-4 minutes until softened and translucent. Add the cubed zucchini and continue to stir-fry for another 3-4 minutes until slightly tender.

Push the vegetables to one side of the pan. Add the black bean paste (chunjang) to the empty side of the pan and stir-fry it for 1-2 minutes to cook out the raw flavor. This step is crucial for a rich sauce.

Combine the black bean paste with the vegetables. Stir in the soy sauce, granulated sugar, vegetarian oyster sauce, and MSG. Mix well.

Pour in the water and bring the sauce to a simmer, stirring occasionally. Reduce the heat to low and let the sauce gently simmer while you cook the noodles.

In a separate large pot, bring a generous amount of water to a rolling boil. Add the Chinese noodles and cook according to package instructions until al dente. Drain the noodles thoroughly.

Return the cooked tofu to the simmering jjajang sauce and stir to combine. Taste the sauce and adjust seasonings if necessary.

Divide the drained noodles among four serving bowls. Ladle a generous amount of the hot jjajang sauce over each portion of noodles. Serve immediately and enjoy!
