In a bowl, mix soy sauce, honey, grated ginger, and minced garlic. Add the sliced beef and marinate for 5 minutes.
Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the marinated beef and stir-fry for 3-4 minutes until cooked through. Remove the beef from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of sesame oil. Add broccoli florets, sliced carrot, red bell pepper, and snap peas. Stir-fry for 5 minutes until the vegetables are tender-crisp.
Return the beef to the skillet with the vegetables. Stir well to combine and cook for 1 minute to heat through.
Transfer to a serving dish, garnish with sesame seeds and chopped green onions. Serve hot.
