Preheat your oven to 180°C.

Chop the 500g of bacon.

Cook the chopped bacon in a large pan over medium-high heat until it is crispy. Remove the crispy bacon from the pan, leaving some of the rendered fat behind.

Chop the 1 brown onion. Add the chopped brown onion to the pan with the bacon fat and cook until softened, about 5-7 minutes.

Add the 120g of spinach to the pan with the onion and cook until wilted, about 2-3 minutes.

Add the 250g of cream cheese to the pan, stirring until it begins to melt.

Pour in the 300ml of cream and add the 1 cup of sour cream. Stir well to combine.

Add the 20g French onion soup packet and season with 1 teaspoon of pepper. Stir all the ingredients in the pan together until well combined and the mixture is creamy and smooth.

Add 1 cup of mozzarella cheese to the mixture and stir until it melts and is fully incorporated.

Return the cooked crispy bacon to the pan and stir it into the creamy mixture.

Chop the 2 spring onions and add them to the mixture, stirring to combine.

Take the cob loaf, carefully cut off the top, and hollow out the inside, reserving the removed bread pieces. Be careful not to cut through the bottom or sides.

Spoon the creamy filling generously into the hollowed-out cob loaf.

Sprinkle extra mozzarella cheese on top of the filling (using some of the 1 cup mozzarella if desired, or additional cheese if you have it).

Arrange the reserved bread pieces around the filled cob loaf on a baking tray.

Bake at 180°C for 30 minutes, or until the filling is golden brown and bubbly and the bread pieces are toasted.

While the cob loaf bakes, chop the 1 tablespoon of chives for garnish.

Once baked, remove the cob loaf from the oven and sprinkle the fresh chives over the top.

Serve immediately with the toasted bread pieces for dipping and enjoy!
