Wash and prepare all fruits and vegetables. Pit and slice the peaches. Peel and roughly chop the carrots. Peel the fresh ginger and roughly chop it into smaller pieces to ensure smooth blending.

Combine the prepared peaches, carrots, fresh ginger, coconut water, and fresh lemon juice in a high-speed blender. If desired, add the optional honey for extra sweetness.

Blend on high speed until the mixture is completely smooth and creamy. If the consistency is too thick, add a splash more coconut water until desired consistency is reached.

Pour the energizer into glasses. If desired, add a few ice cubes to each glass before serving for an extra chill. Serve immediately and enjoy!
